Skyraider is super simple, straight forward and really stable.
CM7 and OMFGB are good options too if you like AOSP. Of course they are a bit "nerdy" for the average user and lack some of that flare some people like to see (I enjoy both of them).
I am currently running Business Gingersense 2.2 because I wanted to try a sense 3.0 ROM. I can say from my experience that this was the toughest to get the way I wanted it. The ROM is so big that you find yourself moving many of your apps to the sd card to free up space for new ones. I spent hours with this getting it right but I think I really like it. I will run it for a few days until I get the real feel.
Answer, it's a personal choice depending on what you are looking for.
+1 on that. Those two ROMs are the best, most stable, highest quality. I personally prefer Sense. Only drawback to SkyRaider is that 4.3 is running Froyo.
