I apologize if this is a dumb question, but when you do a nandroid backup does it back up the kernel too? I went from a sense rom to an aosp rom and was just wondering if I go want to go back and restore my backup if the kernel will be in there too. Thanks!

Yes it does backup your kernel. If you restore a backup everything will restore exactly as you left it.

.ZIP is correct with very few exceptions. The main one being, if you've changed the radio, it will not revert. Splashscreen edits won't either.
